The first thing I ever learned to cook was homemade macaroni and cheese when I was in elementary school in Vermont as a girl scout. We always used Vermont sharp cheeses and baked the mac and cheese in the oven with crumbs or crushed cornflakes on top. It was my FAVORITE!
In 2013, I made small take-and-bake mac and cheese trays for a local market to sell as side dishes. They sold like crazy. So I started to experiment with other versions of mac and cheese. I came up with the jalapeno popper mac and buffalo chicken mac at that time. In August of that year, I took a new job and put the mac and cheese business on "the back burner". Though the food truck dream was still in my heart.
On Christmas 2017, while surfing the net, I came across a tiny food trailer for sale just a few miles away. I am a devoted Christian and believe God has our paths paved ahead, but we have to be paying attention. We went and looked at the trailer on New Year's Eve in the freezing cold. I loved it! It was just enough to take a chance! My husband, not so much. However, on New Year's Day, I woke up and declared that I was buying it and taking a true leap of "faith". In May of 2018, I had my first brewery booking. Momentum built all that summer, and I was busier than I could have imagined. In August, I applied to be in the first ever CityBeat Magazine Mac and Cheese Throwdown (coincidence?) and was accepted. I went on to win the first-ever throwdown! Words cannot describe the pride and validation I felt that day with my kids and husband by my side. The rest is history. We continue to grow and develop new flavors and menu items.
